This month, we are returning to an old friend that we have featured in the past. Fantôme brewery, founded in 1988 by Dan Prignon, is renowned for its deceptively complex Belgian and farmhouse style ales. You may remember the Fantôme Chocolat Dark Version, spotlighted in this space 2 years ago. Prignon often brews these unique ales once and never again, preferring to move on to new oddities. While these one-offs are intriguing, we decided to feature their core Saison and a Tripel for this November. 

 With Thanksgiving around the corner, the idea here is beers to accompany your holiday feasts. My recommendation would be to open the Saison early, when people start showing up; lighter in body and abv, it’s a great pair for charcuterie and/or appetizers. Then, when the festivities are fully on their way, bring out the Tripel; it’s fuller and has a hint of sweetness that will pair with heartier entrees.

Fantôme Saison 750ml

Brewery: La Brasseries Fantôme

About the Brewery: Fantôme is a classic artisanal farmhouse brewery in the heart of the Ardennes Forest. Its brews are in the robust, flavorful, ‘saison’ style, and recall the early days of Belgian Brewing. Brewer Dan Prignon is known for his regular Fantôme Saison and for the creative and adventurous brews he makes to mark each of the four seasons. The recipe changes every year, but don’t ask what makes them so tasty. The Fantôme never gives up its secrets. 

Tasting Notes: Pours a dense head with a golden haze. White pepper, citrus, flower petals and malt combine for a pleasant aroma. Malt and flower petals continue on the palate with a lasting bitter woody finish. Light bodied and pairs well with a charcuterie board or delicate meals.

Fantôme Triple Buse 750ml

Tasting Notes: Pours a dense head with a burnt caramel haze. Malt, savory caramel, and mint are present on the nose. Apple, leather and caramelized citrus make up the palate. Enough body to stand up to fuller, heartier meals or even dessert.
