123 Tequila 1 Blanco
Tequila and mezcal are produced in different states of Mexico (though there is overlap). Tequila can only be made, by law, with one variety of agave: the Blue Agave.
The unaged “Uno” uses 100% blue agave sourced from the Tequila Valley (Lowlands). Distilled from 100% blue Weber agave, it is typically unaged , clear, and bottled straight after distillation. Marked by an earthy, citrus and herbal character, Blanco (Uno) is tequila in its most natural state and ideal as the basis for organic cocktails and sipping.

The agaves used were sourced from the Tequila Valley and the piñas were cooked for close to two days in stone ovens. The Reposado or “Dos” is aged in white oak for 6 months. This complex spirit reveals aromatic raw and cooked agave tempered by the warmth of oak aging with spicy notes of vanilla, anise and hint of citrus; a combination equally at home in cocktails and as a sipping tequila making it the most versatile of the 123 Organic Tequila styles.

The agaves used were sourced from the Tequila Valley and the piñas were cooked for close to two days in stone ovens.
Showcasing the lowland spice and mineral, you can almost taste the iron rich red soils. The "Tres" is aged one year in fresh white oak barrels, coaxes more depth of oak from these exceptional barrels without overpowering the fruit. The barrels used are the real difference here - no ex-whiskey or brandy barrels, just high quality new white oak. Enhanced richness and herbal quality are the keynotes for the Anejo.

The result of a patient process that nurtures the organic agave through a slow maturation and forty months of extended aging, Diablito is an exceptional expression of Jalisco’s Amati-tan region which is home to the only spirit that can bear the name tequila.

Absinthia Absinthe
Absinthia began making absinthe in 1997, ten years before the ban on absinthe was lifted. She is unique in that she not only makes absinthe but embodies it, serves it, and brings energy to the experience of absinthe.
Her knowledge of the history of absinthe is extensive, as is her understanding of the palate of today’s connoisseur of cocktail culture. She has carefully crafted her absinthe using certified organic and biodynamic grapes from California, and certified herbs – wormwood, anise, fennel, and coriander – from Oregon.
Absinthia absinthe is smooth, drinkable, elegant. Because it is made with fresh wormwood, it has a natural sweetness and is delicious with 2.5 parts cold water, or in a cocktail such as a Sazerac, a Corpse Reviver No 2, or in a glass of Champagne, a Death in the Afternoon. While some have warned her about “giving away the farm,” Absinthia wants to share with you the hundreds of ways to enjoy absinthe in her collection of cocktail recipes that she has been collecting for over a decade.

Angel's Envy Bourbon Whiskey
Angel’s Envy Kentucky Straight Bourbon is finished in port wine casks for an award-winning spirit. We guide each batch’s conditioning, blending our handcrafted bourbon in small batches of 8 to 12 barrels at a time.
It’s typically aged for up to 6 years. While we lose about 5% of the spirit each year to evaporation, or “the Angel’s Share,” what’s left behind after we’re done is truly worthy of envy.
Once it’s deemed ready, we finish our bourbon in ruby port wine casks, which adds subtly distinct flavor nuances that enhance the whiskey without challenging it. Our port finishing process lasts between three to six months, depending on taste.
We use 60-gallon ruby port barrels made from French oak and imported directly from Portugal. This creates a whiskey of unprecedented smoothness, sweetness and balance.
