Our Bourgogne Pinot Noir Secret de Famille ("Family Secret") is crafted from a carefully sourced blend of grapes from prestigious terroirs of the Côte d'Or region only (around Chambolle-Musigny, Nuits-Saint-Georges, Gevrey-Chambertin, Marsannay…). We treat these wines as “villages” wines, where yields are restricted and ageing is adapted for each wine.

This charming wine features predominant fruity aromas of blackcurrant and wild red berries. Velvety and silky, this wine boasts soft, balanced structure on the palate, which ends with a delicate finish reminiscent of red fruit.

It’s impossible to discuss Chassagne-Montrachet without mentioning the name Bernard Moreau. Year to year, this celebrated producer vinifies and bottles some of the purest, most thought-provoking wines of the appellation. Employing a style of wine making that might best be described as hands-off, Bernard produces Pinot Noirs that are sensual, opulent and utterly delicious.
The bouquet bursts with rose petals and black currant, plus a peppery, savory edge thanks to the 30% whole cluster fruit. The medium to full-bodied palate charms with a succulent core of ripe, brambly fruit and polished tannins. A touch of new oak lends a little extra mid-palate depth en route to a nicely defined finish. Overall, this is a balanced and delicious effort.

The color is Pale copper. Aromas of strawberries, raspberries and toasty lees. A full-bodied and round flavor. The Brut Rosé is in the traditional Bollinger style with added notes of red berries.
In total the wine is based on Pinot Noir (62%), and contains 24% Chardonnay and 14% Meunier. Over 85% of the wine comes from Grand and Premier Cru vineyards.

Bouchon Family Pais Salvaje Blanco
País Salvaje Blanco was vinified in a traditional and natural way. In order to respect the aromas and flavors coming from the grapes, it was fermented without temperature control and with native yeasts. The must was kept in clay amphoras, which provided micro-oxygenation, giving more complexity. Finally, the wine was neither filtered nor clarified. Fruity aromas such as pear and green apple stand out, intermingled with notes of white pepper. In the mouth it is juicy, fresh and with a long finish. An ideal wine to accompany all kinds of delicacies.

Octomore 12.2 follows in the footsteps of previous Sauternes legends. The now infamous Octomore 4.2 (Comus) became one of the most acclaimed and sought- after whiskies in our distillery’s portfolio, confirming that heavy peat smoke combined with sweet dessert wine of Sauternes is an incredible pairing. This Octomore 12.2 would spend three and a half years in ex-American oak casks, building a solid foundation of fruity and floral spirit in our lochside warehouses before being recasked in to impeccable quality Sauternes casks. The pivotal role of the Sauternes casks would add 18 months of supercharged fruit. Melon, white peach, honeysuckle and coconut add a real twist and sweetness to compliment the peat smoke of this heavily phenolic malt.

Octomore 12.3 is single vintage, single field, single malt. Raised in Church Field on Octomore Farm by friend and farmer James Brown, this Islay grown barley has been trickle distilled through our tall narrow necked stills just two miles from where it was grown. This terroir-driven spirit would take two separate journeys before being combined; 75% was filled into ex-American whiskey casks, while the remaining 25% spent five years maturing in genuine Pedro Ximenez Solera casks from Jerez bodega Fernando de Castilla. This Islay barley spirit has breathed slowly and delicately for five aged years, its salty citrus marine note resulting from the locale of where the barley was grown and our warehouses proximity to the sea. The Pedro Ximenez casks contribute sweet dried fruit notes which highlight the rich dry peat smoke of Octomore.

Ca Maiol Lugana
Our Lugana Maiolo is made from Turbiana grapes and takes its name from the Cascina Maiolo farm, founded in 1710.
The grapes for this wine come from moderately young vines, trained using the Silvoz and Guyot systems and with an average annual yield of around 10,000 kilos of grapes per hectare. The limestone-based soil with strata of clay, dating from the post-glacial era, together with manual picking, soft pressing and temperature-controlled fermentation, confers on this Lugana distinctive characteristics, such as its straw-like color with greenish highlights, its delicate scent and its tangy flavor.
Pair with shellfish and seafood, which can be also used as a condiment in a plate of pasta or risotto; slightly fatty boiled fish.
