This special blanco was bottled with creative bartenders and demanding palates in mind. While shaping the flavor profile for Siembra Valles Blanco, the team at Cascahuin kept coming back to taste the spirit at still-proof. The Rosales family has developed a slow distillation process that yields a Tequila at 92 proof. Lastly, Valles High Proof is rested for 11 months in glass demijohns for a truly unique experience.
Valles High Proof has the same pristine color with complex organoleptic elements and body. Beginning with a silky texture, Valles High Proof has the strong aromas of cooked agave you expect from Siembra Valles. The prevalent agave scent and taste is due to the use of bagasse in fermentation. At this higher alcohol content, Valles High Proof coats your mouth and has a complex, invigorating finish.

Siembra Azul Tequila Blanco
Siembra Azul Blanco is a pristine double distilled spirit, with a fresh taste of vivid fruit, citrus and herbaceous aromas. The appearance is crystal clear, like spring water, with a viscosity that lightly coats the glass upon swirling. The first waft will bring elements of lemon balm, the dry red earth of the highlands, and traces of allspice and olive brine. Upon first sip, you will find this tequila is full of life with a sweet yet dry start. Citrus notes, smoked agave, geraniums and tobacco follow. This assertive tequila has serious complexity with uplifting freshness as the palate cascades with sweet florals and cooked green peppers. Siembra Azul Blanco finishes dry and bright in a way that balances fresh cucumber with kaffir lime flavors and hints of cracked-pepper.

Siembra Metl Cupreata Mezcal Joven

The terroir of Michoacan is characterized by its rivers; the Trans-Mexican Volcanic Belt with many active, dormant and extinct volcanoes; and the variety of forests from conifer to tropical. The Vieyra Vinata is cut into the side of a hill in the steep highlands above Morelia in the Rio Balsas region surrounded by temperate evergreen forest. The high-altitude climate is characterized by sandy-soil and moderate rainfall. The forest floor is soft with pine needles, moss and a red sandy clay; all of which are influences in the flavor profile of Siembra Metl Cupreata.
The pungent, smoky-sweet smells of the agave hit the nose like herbaceous, wet earth. Then, like afternoon in the vinata the palate warms with a silky texture; the flavors of roasting agaves and the resinous pine bark. The finish bursts in different areas of the mouth with fresh cut agaves and the meadows of Pino Bonito. Glass rested for 6 months and hand-bottled.

Siembra Metl Cenizo Mezcal Joven

Don Jose Emilio Vieyra is a fourth generation Mezcalero working with his son, Emilio Vieyra Rangel. These men are leaders in the community and advocates for sustainable production and local economic development. This is one reason we are honored to bring you another mezcal from Pino Bonito, Michoacán. This batch of Siembra Metl Don Mateo Cenizo is even more limited than Cupreata. The sap from Pine and Oyamel are principal influences in the flavor profile of both of these Joven Mezcales. While Cupreata is more herbal, Cenizo has a spiced, floral bouquet. Strong nut varieties come through on the nose and palate; principally almonds. The texture coats the mouth with burst of fruits, like apples, and soft vanilla notes. As you enjoy Cenizo, pine remains central, linking you to the terroir of Pino Bonito the tradition of distillation in the Vieyra family.

Siembra Valles Ancestral is the return to the original roots of Tequila, when the process was more important than mass production.The methods of this spirit make it the reuniting element of agave distilled family.With the use of pit ovens, hand maceration, and wood distill. Siembra Valles Ancestral is bringing Tequila back to practices long abandoned in the name of efficiency, introducing historical flavors, while boldly charting a sustainable path forward.
Siembra Valles Ancestral glazes the mouth with a soothing silky feel. Herbaceous tones and sweet, cooked agave dominate the forefront as undertones of pine, bitterness, and smokiness linger. Citric accents that are standard for Distilleria Cascahuin are present in the spirit and intensify after resting for about five minutes in a glass. The inviting aroma of orange blossoms and a warm earthy feel from the agaves roasted in an earthen pit oven add to the complexity of this expression. The finish is a combination of sweet, earthy, and herbal; boasting the complex flavors of agave untouched by machine.

Siembra Azul Anejo Tequila

A commanding, mature spirit, the Añejo is rested for about 18 months in white oak "medium toast" barrels that come from the Ozarks in Missouri. The spirit begins with a subtle nose with a hint of bitterness. After opening up, the nose can detect oak with notes of vanilla. This is an elegant and robust spirit beginning with sweet citrus and giving way to Oak palate. Siembra Azul Anejo features a subtle yet complex flavor profile with notes of cinnamon, tobacco, raspberries, black olives, vanilla, coconut and butterscotch. Aging of this highland tequila brings out caramels and honey. Still the distinct floral and herbal overtones remain making this anejo brighter than comparable tequilas. This finishes with an earthy and peppery aftertaste. The spirit offers a prolonged finish, and is best enjoyed neat in a Glencairn glass or large snifter.
