Jacques Dumont Sauvignon Blanc is grown on the hills just southeast of Sancerre and thrives on the soils of clay-limestone and flint. In order to optimize the quality of each harvest, the vines are subject to constant observation: yields are limited to ensure high-quality fruit and the maturity of each plot is evaluated to identify the optimal time for harvest. After sorting the grapes, they are pressed slowly to extract only the best fruit. The wine is then fermented for two weeks at temperatures of 55˚ to 64˚ Fahrenheit, a technique that ensures the conservation of maximum fruit flavors. The wine is aged lees until February to develop complexity and body along with a long finish. A succession of tastings then follows to determine the ideal bottling time for Sancerre.

Tasting Notes: Pale golden color with perfect clarity. On the nose, it is open and fruity with concentrated aromas of citrus and tropical fruits. Fine and expressive in mouth with good acidity and freshness. The finish is balanced and long.
Food Pairing: Very pleasant as an aperitif, this wine is also the perfect companion for a wide variety of seafood dishes. Baked or grilled fish such as salmon or raw preparations like tuna carpaccio will be equally complemented by the bright acidity and fresh fruit flavors of this Sancerre. It will also pair nicely with fresh salads and toasted croquettes with saffron and spice.
