Paul Dethune Brut Cuvee l'Ancienne 750mL

This small organic winery in the village of Ambonnay in Champagne consists of seven hectares of land, lovingly cultivated by Pierre Déthune. It produces nine Grand Cru wines. Each of these undergoes malolactic fermentation and aging in the winery’s cellars, which which were cut out of the chalk in the 17thcentury.

50% Pinot Noir and 50% Chardonnay from the same vintage, including 30% reserve wine, aged 7 seven years in their cellar. Rich, with aromas of almond and nougat, and a touch of mint on the attack. Both powerful and full-bodied, it offers flavors of candy, dried fruit and beeswax. This rich diversity is confirmed on the palate where the perfect alliance of power (Pinot Noir) and finesse (Chardonnay) develop aromas of chocolate and peppermint with a toasted character. This old-style wine, with its delicate woodiness, is perfect with an aumônière de chou frisé, Saint Pierre filet and pan-fried foie gras or with a lamb shank in honey sauce or a white chocolate mousse.
