For a long time, there has been a belief that technology has been essential in the production of sake. However, by working with the rice used to make this sake, we have learned that there are a few characteristics that are impossible to replicate with technology alone. Gohyakumangoku produced in Nanto City, Toyama Prefecture, is the launching off point for this line of sake.
