Organic/Biodynamic farming. Old vines (planted in 1953, 1958 and 1965) in the low-yielding parcel of Les Beaudiers planted to Meunier, but the occasional Chardonnay, Pinot Noir and Fromonteau vines are found in the vineyard as well. Extremely careful, meticulous work is done in the vineyard to obtain the healthiest grapes. Destemming and maceration of 12-16 hours, native yeast fermentation, primary fermentation in barrel, no malolactic fermentation, aged minimum of 4 years, dosed at 0-5 gr/l depending on the vintage. Bottled unfined and unfiltered.
A vinous and textured wine with surprising delicacy and lift for a rosé de saignée. From savory tones to rich red fruit, this singular, structured Champagne Rosé is sheer drinking delight.
