The Opus One 2017 offers a harmonious aromatic balance of rich dark fruit, stems of roses, and earthy forest floor. The juicy entry offers a round, silky mouthfeel with just enough acidity to complement the satin texture. This seductive wine shows flavors of black cassis, black cherry and a hint of cocoa powder. The fine-grained, plush tannins evolve into a long, supple finish.
Blend: 80% Cabernet Sauvignon, 9% Petit Verdot, 5% Cabernet Franc, 5% Merlot, 1% Malbec

Orma is deep ruby with garnet reflections. On the nose, the wine demonstrates presence and intensity of aroma. Notes of red and black fruit are supported by sweet spice, cocoa, dry earth, Mediterranean herbs and tobacco. On the Palate, Orma is elegant and dense. Orma's sturdy, yet ripe tannin structure lends the wine a velvety texture. Bright acidity reflects the wine's Italian terroir and keeps the wine balanced through a long finish. Expect excellent ageing potential from Orma.
Orma is a powerful red wine that matches wonderfully with full-flavored dishes, particularly those based around game and roasts. However the wine's delicate layers of flavor coupled with purity of fruit make it an ideal companion to ripe cheeses, or simply as a Vino da Meditazione as well.

Blending classic Napa Valley opulence with Burgundian-style restraint, the 2018 Pahlmeyer Napa Valley Chardonnay opens with generous aromas of Meyer lemon curd, citron, toasted brioche and hints of delicate white florals. The palate offers richness up front and on the long finish, with mouth-watering mid-palate acidity and flinty wet stone characteristics giving the wine attractive depth and substantial texture. This Chardonnay delivers notes of crisp green apple, ripe nectarine and white peach that tantalizingly mingle with hints of cinnamon, vanilla bean and crème brûlée.

This wine has a deep garnet rim with a dark burgundy-hued core. A nose of sweet vanilla, cigar and blackberry carries over onto the soft, voluptuous palate. Ripe fruit flavors are accented with notes of licorice, graphite slate and unsweetened chocolatepowder, while hints of dark roasted coffee show up on the very edges of the tongue.
Blend: 87% Cabernet Sauvignon, 5% Merlot, 4% Malbec, 3% Cabernet Franc, 1% Petit Verdot.

Winemaker Tasting Notes:
Generously rich and intense, 2017 L’Esprit des Pavots greets the eye with a near black color and highlights of crimson ruby. The wine displays blueberry, blackberry, black cherry, hallmarks of the Les Pavots terroir, along with plum, and hints of mocha and vanilla bean. The Au Paradis terroir brings notes of currant and crème de cassis with meaty nuances. The palate is full-bodied and concentrated, exhibiting savory of leather, tobacco and white pepper and accents of chestnut, black truffle, cedar and supple tannins with a lingering finish. Fruit forward and enjoyable at release.
Blend: 35% Cabernet Sauvignon, 33% Cabernet Franc, 30% Merlot, 2% Petit Verdot
2016 Les Pavots meets the eye with a near-black ruby color and deep ruby rim. The nose displays a sophisticated bouquet of fresh leather, morel mushroom, vanilla bean, black fruit, cherry, blackberry, blueberry coulis, and a stylish ‘garrigue’ touch. Fullbodied and elegant, the wine offers the same rich, ripe fruit impressions on the palate. The mouth feel is dense and round, with supple tannins and subtle mineral notes leading to a long finish. Approachable now, the wine provides a classic presentation of our estate’s terroir. It will handsomely reward four years of cellaring and continue to age gracefully for two decades.
Blend: 62% Cabernet Sauvignon, 18% Cabernet Franc, 13% Merlot, 7% Petit Verdot

Just when we thought this one would never grow up, we find it moving past primary fruit with elegant characteristics of cedar, tea and tobacco. Even so, expect the '97 to remain lively for a few years to come as it still offers big mouthfeel, dark color, with flavors of chocolate and black fruit. A long finish of mocha, vanilla and spice is tied up with the classic tannins of the Stags Leap District.
