We start with 100% American barley (predominately two-row pale malted barley, the remainder is lightly roasted).
After distillation in our eau de vie pot stills, the whiskey is aged in used bourbon casks and French oak wine casks, as well as filtered through maple charcoal.
We then finish the whiskey in casks that had held house-made umeshu (a Japanese style of plum liqueur we made entirely from California-grown ume fruit).
Crisp and dry, with a touch of malt sweetness. The smoky finish lingers and builds with each sip.
We created this spirit with Japanese-style whiskey highballs in mind (hence the name Baller...). We also recommend it in place of Scotch whisky in a Bobby Burns or Rob Roy, or in a Boulevardier.

The Chianti Classico Riserva has a ruby-red hue with a trace of garnet. The nose is elegant, displaying hints of spice and fruit. This a well-structured wine with smooth tannins and a long finish.
"A red with plenty of ripe fruit, such as berries and cherries with some fresh-herb and lemon undertones. It’s medium-to full-bodied with bright fruit and fine tannins. From organically grown grapes. Drink or hold". -94 points James Suckling

Chambers and Chambers
"It has a rare confluence of delicate complexity and medium to full bodied weight on the palate, with lovely minerality like other wines of the region.
Pair with roast lamb, spicy sausage or charcuterie in a supporting role, this wine would fare well on the table.
"Bramble berry, chocolate, basil, rose petal and blackberry mingle with fresh aromatics of sea air and oyster shell. The mouth is generous and full with notes of cassis, creamy dolce de leche, nutmeg, hazelnuts and plum preserves. Balanced acidity and fine tannins bring structure and length to the long finish." -WINEMAKER LUISA PONZI
Wine Enthusiast - “This is a block selection from a 2005 planting at the Aurora Vineyard, designed to replicate the original Abetina vines. It's silky and saturated, and scents of roses and flavors of figs and black cherries abound. Details of nutmeg and mocha contribute further length and interest. It should drink well into the mid-2020s, but it is flat-out delicious already, so no need to wait.” -95 Points

This bourbon started out as an experiment with just three bourbon barrels on Trey’s friend, Chris Fischer of OCEARCH’s ship, in a curious effort to discover what would happen if bourbon was left to weather the extreme elements: temperature fluctuations, salt air and the gentle rocking of the ship. The result was a thick, dark bourbon that showcases complex flavors reminiscent of other spirits; the almost black color and caramel flavors resemble a dark rum as the sugars within the barrels caramelized; the briny, savory taste from the barrels breathing the sea air is reminiscent of Islay Scotch; and at its core, it’s a true bourbon. Due to a massive demand from consumers, Trey has now commercialized this experiment and sent hundreds of barrels around the world. Each voyage of Jefferson’s Ocean typically crosses the equator four times, visits five continents and over 30 ports on an average sailing.

This medium-full bodied Bourbon has a bouquet of vanilla, caramel and cherry. The spicy kick of a high rye content is balanced by sweet, smooth corn and the unmistakably silky viscosity of organic Washington soft white winter wheat. Matured in 53-gallon barrels, this meticulously handcrafted five-year Bourbon displays notes of brown sugar and maple syrup without the woody harshness that can result from extended micro-barrelling. Its mellow tannins and complex layers unfold into a finish of buttery oak, toffee and again the brightness of fresh cherries.

“The 2012 Cabernet Sauvignon Estate is gorgeous. (It) dazzles with its rich, textured fruit and incredibly welcoming personality. Hints of smoke, tar, licorice and menthol add complexity to the intense fruit. This is a wine I want to drink, not merely taste.”

Here’s a classic Vosne-Romanee from the elegant single-vineyard ‘Aux Raviolles’, but definitely produced with Capitain flair and finesse. Red like a jewel, with black, black fruit and spices. This is balanced power, velvety and fresh, the classic Vosne ‘fist in a velvet glove’.
From one of the top vineyards in the Mosel, Dr. Lippold’s plot is farmed sustainably (pretty much organic) and harvested manually, which is the only way to work this very steep vineyard. The grapes are vinified traditionally with minimal intervention. After bottling, the wines are aged at least 2 years before release. Beautiful off-dry flavors of citrus with stunning depth and length.
“From his principal, prized sector of the Würzgarten (ambitiously characterized on Lippold back labels as “Grand Cru Weltersberg”), this vivacious and refreshing bottling features very discreet but efficacious residual sugar that beautifully supports generously juicy fresh apple, kiwi and lime. The scents are effusive, the midpalate impression polished but lively. The lingering finish invigorates with its piquant notes of apple seeds and lime zest, tugs at the salivary glands thanks to its salinity, and delivers a load of smoky, slaty stony matter amazingly abundant for a wine of such delicacy and animation. What a model of balance, transparency and mineral saturation! This is what I call “classic Kabinett."- Vinous
