Have you ever tried a wine that a Nun helped to craft? This was our first--and it's as unusual as it is delicious! The 2020 Coenobium is comprised of co-harvested and co-fermented Trebbiano, Verdicchio, and Malvasia grapes. The Sisters of the Cistercian order work together with renowned winemaker Giampiero Bea to craft this rare and highly sought wine that's grown in the volcanic soils of Lazio, Italy. 

Trebbiano, Verdicchio, and Malvasia translate the power of Vitorchiano's volcanic soils with a somber interplay of smoke and iron with green apple, fennel frond, and honey. Coenobium displays notable breadth, yet it is muscular and chiseled rather than heavy. Fermented spontaneously in stainless-steel and fiberglass tanks and aged on lees until blending prior to bottling.
