Velvet Merkin is the beer that almost wasn’t…Indeed, this vintage oatmeal stout’s comical (or is it scandalous?) name went oﬀ the grid for several years, but now it’s back due to popular demand. Velvet Merkin is aged for a full year in retired spirits barrels from Heaven Hill, Woodford Reserve and others, yet manages to oﬀer mind-boggling balance and restraint. You will wig out when you taste Velvet Merkin’s rich milk chocolate, bourbon and espresso ﬂavors, preceded by aromas of vanilla, coconut, toasted oak and mocha.
Panic was the first IPA we ever released, way back in 2012. Apparently we did something right, as it won Best of Show in the 2014 California State Fair, and has consistently been one of our most popular beers. Panic is heavily hopped with modern American hops, featuring copious amounts of Amarillo, Centennial and Simcoe. Lurking beneath the flavorful hops are subtle citrus flavors, a not-so-subtle stone fruit, notes of grapefruit, and a slightly dank nose. Big hops and a smooth body make Panic an exceptional example of a West Coast Style IPA.
As brewers, we get the privilege to sample our beers straight from the tanks in all their raw glory. Some beers need a little polishing to get ready to go out into the world, while others—the hop-heavy, rowdy, crowd-pleasers—should just be left alone. We wanted to share this brewery-only treat with you, so we present this Hazy Little Thing, our unfiltered, unprocessed IPA, straight from the tanks and into the can.
Fragrant, refreshing and bright, Citra Park is our classic single hop pale ale. Our unique house yeast creates a robust and versatile foundation, while Citra hops impart a hint of tart grapefruit, culminating in a fresh, dry finish. Citra Park’s pale sunshine color and clean flavor make this the perfect session beer to enjoy from a picnic blanket on a warm afternoon.
Manzanita is an imaginative take on the classic German rauchbier, combining traditional ingredients with inspiration from the Northern California wilderness. An assertive, multi-layered smoke aroma—courtesy of beechwood-smoked malts and charred manzanita branches—gives way to a light-bodied structure and a surprisingly delicate balance of flavors: nutty, herbal, sweet and savory. A beer for a campfire on a crisp fall night.

"We humbly present XXII Anniversary Ale, a beer celebrating our 22 years brewing here on California’s Central Coast. Each year we host a barrel aged blending competition with local winemakers & this year the winning blend is from Sherman Thacher & Daniel Callan of Thacher Winery, along with Terry Hoage & Phil Lamontagne from TH Estate Wines, with help from our friend & master bread maker Arie Litman. XXII Anniversary Ale is 12.7% ABV & is a blend of bourbon, rum & gin barrels.

CBS was born when we stumbled upon some bourbon barrels that had previously housed maple syrup. We opted to put the same base beer as KBS, an imperialized version of Breakfast Stout, in the maple barrels and, after one taste, we knew we had something special. Rich maple syrup, roasted coffee and velvety chocolate meld together in what can only be described as a transcendental drinking experience.
