Fair Isle Brewing is based in Seattle and focuses on mixed fermentation and farmhouse style beers. They opened in 2018 with creative and financial help from the legendary Texas farmhouse brewery, Jester King. Jester King has been instrumental in popularizing saison styles in America and they have a cult following second to none. To have them backing your brewery is no small feat and speaks volumes about the expectations for Fair Isle. Fair Isle thinks of the term “farmhouse brewery” as more as an ethos than a literal description of their production. To them it means letting the ingredients of the Pacific Northwest take the lead and allowing beers and fermentations to develop naturally and organically. Their beers are delicate, fun and superbly well made.

Bobbi is a Saison brewed with Simcoe, Citra and Mosaic hops and locally sourced barley and wheat grown in the Skagit Valley. Bright stone fruit on the nose followed my moderate acidity and tropical hop notes on the palate. Clean, dry finish. |

Eugene uses the spent hops from Bobbi to create what the brewery describes as a “saison impersonating an IPA”. After the wort for Eugene is brewed, it is transferred to a fermentation tank containing scavenged hops from Bobbi’s brew. Primary fermentation takes several weeks, and the finished product is dry hopped with Nelson Sauvin hops. |

Odelette is a Biere de Garde brewed using ingredients from the Pacific Northwest and fermented with house cultured wild yeasts. It’s then lagered in Missouri Oak Foeder for eight weeks. The resulting beer is earthy and dank on the nose. Punchy acidity on the pallet backed up by just a note of dark, roasted malt character. |
