Organically farmed vineyards in Pitsilia, Cyprus. Ungrafted vines at an average altitude of 1200 meters (800-1400m). Hand picked grapes are subjected to two days of skin contact before being fermented with selected yeasts under strict temperature control.
Varietal compisition is: 98% Xynisteri; 2% Malaga.
