Lexington Wine Co. Cabernet Sauvignon is sourced exclusively from the Gist Ranch Vineyard, nestled in the heart of the Santa Cruz Mountains AVA. 17 miles from the ocean and at a dizzying elevation of 2300 feet, the vineyard boasts high-density vines planted in 2000 on fractured Vacqueros Sandstone soils and farmed by organic principles, including dry farming in some blocks even in drought years. 2016 started with a warm January breaking up the cool rainy winter and was followed by a long cool summer which allowed grapes to hang on the vine until the desired ripeness was achieved. Quality across the region was considered excellent, creating balanced, age-worthy wines with bright acidity and an intense aromatic quality.  At almost 9 years of bottle age, this Cabernet Sauvignon heavy blend rounded out by Merlot and Cabernet Franc is still bright and energetic.  Expect complex aromas of tobacco, truffle, licorice, baking chocolate, and a mélange of fresh and dried dark fruit. While the nose prepares you for a dense, powerful wine, the palate is surprisingly fresh with bright acidity and tannins that, while softened with age, still have a persistence to them, are accompanied by flavors of fresh blackberries, black cherry, and plum on a long fresh berry finish.

75% Cabernet Sauvignon, 18% Merlot, 7% Cabernet Franc
