7.2% Scottish stock pale ale brewed with Berneray Bere and hopped with whole flower Goldings and Hallertau Blanc.
This beer was brewed with some very special barley indeed. Whilst you may have heard of Bere (pronounced like 'bear') barley before - the ancient Scottish landrace barley, the oldest cereal in the UK, brought over by the vikings and once used widely in Scottish brewing and distilling - you may not know that it comes in sub-varieties. This particular sort originates from the beautiful island of Berneray in the Outer Hebrides and was grown and malted by our esteemed colleagues at @craftymaltsters on their farm in Auchtermuchty, Fife.
It's a rare privilege to get to brew with a living piece of Scottish brewing and distilling history. It offers a complex flavour of moist hay, honeyed sweetness and a citrussy, floral character.
The beer was open fermented then oak fermented with dry hops in neutral casks full of our house microbes which added a deep complexity and subtle acidity to the beer. Finally, it was primed with fresh beer and allowed to condition in the bottle.
It pours golden with tight white foam and fills the room with aromas of peaches poached in elderflower wine, citrus bark funk and honeysuckle. Upon further inspection, Goldings character emerges with fresh herbs, dried lemon and the substantialness of leafy hops. The beer feels full on the palate but has the dry bitterness you'd expect from Epochal and a little zap of acidity that increases refreshment.
