It is pressed slowly, at a low pressure, is cold stabilized, and undergoes a long, cool alcoholic fermentation in stainless steel. Once the fermentation is over, the wine is racked and aged 6 months on the fine lees, receiving battonage when necessary. Sourced from vines with an average age of 25 years.
