Subtle Spirits is more than your traditional independent bottler. Part spirits purveyor, part alchemist. Their ideas are brought to life by original artwork produced in collaboration with artists to deliver an experience that extends beyond the glass, canvas, or mind.
Quixotic is a straight rye whiskey comprised of three barrels, all just shy of 6 years old and bottled at 101 proof. These straight rye whiskies were distilled and aged at Midwestern Grain Products in Indiana before being brought to California to finish the aging process. There are fruit tones like dried apricot, dried nectarine, and some un-ripe (green) wild strawberries, but they are all balanced by a plethora of savory spice aromas; cinnamon, kola nut, pink peppercorn, and vanilla bean. Together they form a sum greater than its parts. The fruit and subtle sweetness may even be enough to fool someone into thinking this was a bourbon. The oak is present, but well-integrated and gives way to a very smooth and prolonged finish.

Tequila Ocho Puntas

Puntas is the first overproof bottling from Ocho, planned as a limited edition yearly release. The agaves used for this inaugural bottling were harvested from the Camarena family’s rancho La Ladera in the summer of 2021. The puntas, or “distiller’s cut” has long been considered the most coveted part of the distillate. This narrow selection is from the very end of the “heads” and the very beginning of the “heart” in the distillation process, making it quite flavorful and precious. Traditionally collected by the producer and reserved for enjoyment with friends and family on special occasions. While tequila in the US is commonly bottled at 40% abv, it's exciting to see producers respond to the appetite for the ultimate, unadulterated expression of a spirit with these higher proof editions, bottled at or near the strength they were distilled to.
Tequila Ocho Puntas comes off the still at roughly 128 proof, then brought to 101 proof using deep well-extracted water. It’s at this high proof that drinkers will discover the highest concentration of agave flavors, while still experiencing a spirit that is extremely enjoyable to sip and savor neat.

Then it’s finished for a minimum of 4 months in hand selected, air-dried American Oak from the Taylor family farm in Kentucky. The sweet notes of vanilla and elevated wood spice give you an unmistakable taste of Southern hospitality.
Nose: Opens with notes of freshly cut cedarwood, almond and vanilla. Sweet fruit and warming charred wood influences complement the pot still spices.
Taste: Cinnamon, nutmeg and clove build over time working in tandem with the oak’s rich tannins. Autumnal fruit notes delicately linger with sweet and decadent notes of brown sugar toffee and vanilla.
Finish: Fruits are the first to slowly fade, leaving the pot still spices to linger in harmony with the sweet and intricate American oak.

Bordiga Occitan Italian Gin

Gin was first made by Bordiga in 1889, and this gin is made from the original Bordiga recipe. Only four main botanical flavors are used, some from the Occitan* Alps, hence the name. The four are Angelica, Juniper, Cardamom and a secret ingredient (with traces of orange and lemon peel). Occitan Gin has traditionally been made exclusively from juniper that grows wild (not cultivated) in the Maritime Alps, near Cuneo, which are some of the highest mountains in Europe. This combination of altitude and maritime influence enriches the essential oils of the juniper berries grown here, giving them a unique flavor; the berries are picked by hand. The different botanicals are macerated separately in triple-distilled grain alcohol, then distilled before being bottled.
Juniper, traditionally the most important botanical in Gin, has been used for centuries in Piedmont to make non-alcoholic remedies for digestive and other health problems. A distillation of juniper has been made by Bordiga since the founding of the distillery in 1888, and gin as such was sold from the early part of the 20th century, although the word ‘gin’ was banned by the fascists as foreign (even the word ‘vermouth’ had to be italianised as ‘Vermut’). This is not a new marketing effort, in other words.
*‘Occitan’ is a language that originated in the Languedoc region of southwest France, and is still spoken in some of the isolated mountain valleys to the west of Cuneo, on the border with Provence.
