St. George Spirits Single Malt Baller Whiskey
Reminder: We only ship spirits within California at this time.
We start with 100% American barley (predominately two-row pale malted barley, the remainder is lightly roasted).
After distillation in our eau de vie pot stills, the whiskey is aged in used bourbon casks and French oak wine casks, as well as filtered through maple charcoal.
We then finish the whiskey in casks that had held house-made umeshu (a Japanese style of plum liqueur we made entirely from California-grown ume fruit).
Crisp and dry, with a touch of malt sweetness. The smoky finish lingers and builds with each sip.
We created this spirit with Japanese-style whiskey highballs in mind (hence the name Baller...). We also recommend it in place of Scotch whisky in a Bobby Burns or Rob Roy, or in a Boulevardier.

The color of this whiskey is impressively dark for its age. Immediately upon pouring it into the glass you can smell aromas of freshly baked rye bread. Brown sugar, cacao nibs, dark chocolate, marshmallow and charred oak dominate the nose. Unlike any of the typical Kentucky ryes on the market, the 100% rye mashbill really sets the tone for flavors. The palate is just as intense as the nose, but very balanced for the proof, with a finish that lasts for days.

Frísco is inspired by Pisco, the grape-based spirit native to Chile and Peru.
Crafted in San Francisco from grapes sourced from neighboring California vineyards, Frísco is double distilled on a copper pot still in small batches, followed by a charcoal mellowing – a technique rarely used on this type of spirit.
The result is a clean, full-bodied, delicately smooth taste, the company says, complemented by floral overtones and suggestions of tropical fruit.
Frísco is a 45% ABV immature brandy produced and bottled at Seven Stills of SF, a boutique distillery. Frísco is now available in a 750-ml. format for a suggested retail price of $35 in California and New York, with rollouts planned for additional markets later this year.

Sourcing
St. George head distiller Dave Smith searched high and low for the perfect ingredients to create an homage to New Orleans–style coffee. Ethiopian Arabica coffee beans, French-roasted chicory root, Madagascar vanilla, and organic cane sugar impart just the right balance of flavors.
Roasting
Our friend and professional roaster Brad Joyce has roasted every batch of beans for NOLA on Lil Ugly, our 1952 Probat 12kg roaster. We rely mostly on medium to dark roasts for our process, but also incorporate some lighter roasts to fully capture what we love most about Yirgacheffe coffee beans: bright raspberry and blueberry fruit notes balanced against dark and savory flavors. Brad’s depth of experience and intuitive approach are critical to coaxing out the character that we want to showcase.
Grinding
When our coffee grinder didn’t live up to the task, in true DIY St. George fashion we MacGyver-ed it and came up with another plan on the fly: Luckily, our grain mill gave us the perfect grind.
Infusing
Our cold-infusion method preserves the elegant flavors and aromas that we love from the beans, while minimizing extraction of astringent components.

In the UK, foraging the wild berries, steeping them in gin, and making the liqueur has been part of rural family tradition for centuries. Our Sloe Gin recipe has been handed down through the Marshall family for generations: we start with our signature gin, which we macerate with sloe berries until the delicious fruit flavor and color have fully released in the gin. This vibrantly-hued liqueur features both bright berry and citrus notes, combining ripe sweetness with fresh acidity.
Traditionally, sloe gin is served after a meal by itself as a digestif, but its unique color and flavor also combine wonderfully with a wide variety of spirits. It is delicious when mixed with everything from whiskey to agave spirits, but is also wonderful with sparkling wine and makes an incredible Sloe Gin Fizz.

The Love Red grapes are harvested early to highlight the fruit and preserve the acidity. The Carignan is a combination of whole cluster and destemmed fruit from three 70 year-old dry farmed vineyards in Northern California. The Valdiguié is 100% whole cluster and the Syrah is mostly destemmed. The wine was aged in a combination of neutral French oak barrels and concrete tanks. The Carignan delivers the blue fruit in the wine. Valdiguié brings out the brightness and lifting acidity. Syrah holds it together, adding depth and structure.

Sourcing

WINEMAKER’S NOTES: The Love Red grapes were harvested in the second week of September to preserve the grape’s natural acidity. The Carignan and Syrah were both whole cluster fermented and destemmed in concrete and stainless tanks. The Valdiguié went under carbonic fermentation in stainless steel. Aged for 8 months in concrete and neutral French oak barrels.
VITICULTURAL AREA: The grapes come from 70 year old vines in Solano County’s Green Valley. This area is tucked between Napa and Suisun Valley. Parenti and Wirth Ranch each provide Syrah and Valdiguié for this blend. The Carignan comes solely from Parenti Vineyard. The grapes of each vineyard grow in clay loam soils and come from mostly dry-farmed and head-pruned vines.
