St. George Spirits Single Malt Baller Whiskey
We start with 100% American barley (predominately two-row pale malted barley, the remainder is lightly roasted).
After distillation in our eau de vie pot stills, the whiskey is aged in used bourbon casks and French oak wine casks, as well as filtered through maple charcoal.
We then finish the whiskey in casks that had held house-made umeshu (a Japanese style of plum liqueur we made entirely from California-grown ume fruit).
Crisp and dry, with a touch of malt sweetness. The smoky finish lingers and builds with each sip.
We created this spirit with Japanese-style whiskey highballs in mind (hence the name Baller...). We also recommend it in place of Scotch whisky in a Bobby Burns or Rob Roy, or in a Boulevardier.

St. George Terroir Gin
Terroir is a forest in your glass—with ultra woodsy notes of Douglas fir, California bay laurel, sage, and a hint of citrus.
Stunning on the rocks or in a martini. Absolutely lovely in a Collins garnished with fresh fennel and bay leaf (or whatever fresh herbs you happen to have on hand).
For some, the Douglas fir in this gin immediately triggers an association with Christmas—but for us it’s a gin for all seasons. At the height of summer, try Terroir with fresh huckleberries, blueberries, or raspberries for an earthy, brambly delight.

St. George Bruto Americano
Bruto is made from a variety of herbs, roots, and other botanicals. Though the exact number of ingredients and formulation are proprietary, we will say that the bitterness comes primarily from gentian root; the citrus notes mostly from California-grown Seville orange; and the woodsy notes from balsam fir and Cascara sagrada (bark from the California buckthorn).

St. George Nola Coffee Liqueur
Sourcing
St. George head distiller Dave Smith searched high and low for the perfect ingredients to create an homage to New Orleans–style coffee. Ethiopian Arabica coffee beans, French-roasted chicory root, Madagascar vanilla, and organic cane sugar impart just the right balance of flavors.
Roasting
Our friend and professional roaster Brad Joyce has roasted every batch of beans for NOLA on Lil Ugly, our 1952 Probat 12kg roaster. We rely mostly on medium to dark roasts for our process, but also incorporate some lighter roasts to fully capture what we love most about Yirgacheffe coffee beans: bright raspberry and blueberry fruit notes balanced against dark and savory flavors. Brad’s depth of experience and intuitive approach are critical to coaxing out the character that we want to showcase.
Grinding
When our coffee grinder didn’t live up to the task, in true DIY St. George fashion we MacGyver-ed it and came up with another plan on the fly: Luckily, our grain mill gave us the perfect grind.
Infusing
Our cold-infusion method preserves the elegant flavors and aromas that we love from the beans, while minimizing extraction of astringent components.

Bartlett pears (yes, pears) are the secret here. Why? Thirty-five years of distilling Bartlett pears has shown us just what this gorgeous fruit is capable of—especially when put through our Holstein stills.
Using the same flavorful and aromatic pears here as in our flagship pear brandy makes perfect sense, delivering a spirit with no overt pear flavor but with substantial body and subtle floral notes—and creating a vodka that is uniquely St. George.

St. George Spirits Breaking & Entering American Whiskey
With Breaking & Entering Bourbon, our plunder is your pleasure. To make B&E, St. George distillers Lance Winters and Dave Smith went deep into the rickhouses of Kentucky’s most venerable bourbon distilleries and brought several hundred barrels back to blend at our distillery in Alameda. The result? A criminally delicious bourbon with a storied Kentucky pedigree that would’ve been impossible for any one distillery to produce on its own.
Breaking & Entering is a bright, spicy, not-too sweet bourbon characterized by warm breakfast notes of maple, banana, butter, cinnamon, and cloves. Cherry cola and eucalyptus/menthol are also present.
