Last Call Gins
Freeland Spirits Gin is small batch crafted using a unique blend of traditional heat distillation along with vacuum distillation, which allows us to use fresh, Pacific Northwest ingredients. Fresh herbal essences of rosemary, mint and crisp cucumber lift the nose. Grapefruit and lemon peel brighten the brisk juniper and bold spice. Pink peppercorn, coriander and star anise mingle with 10 additional dried botanicals in the copper pot still.

Flavio Porcu, who was born and raised in Sardinia, founded Wild Sardinia. While Flavio had worked in the wine and liquor industry most of his life, it wasn’t until he turned 46 that he decided to set out on his own and start what he dreamed of doing for years. Wild Sardinia is produced in the Province of Oristano in Sardinia, an area is known for its wild and pristine beaches. When Flavio decided to start his project here, he knew he wanted to create a product that reflects its location and is made from high-quality ingredients. Flavio partnered with Silvio Carta, a distillery on the island whose history goes back more than half a century. Over the years, the company has instigated an ethos of combining tradition and innovation culminating in the recent opening of a new, state of the art distillery in Zeddiani in the heart of Oristano. Today the distillery is run by Elio Carta, son of the founder. Flavio was attracted by two key features of the distillery; its proximity to the Vernaccia vineyards, used for making first Wild Sardinia’s iconic Vermouth, and the company’s slogan Armonia della Natura or Harmony in Nature, which fit with Flavio’s plan of using all-natural ingredients.
Wild Sardinia Gin, which is made exclusively from the hand-picked berries of wild juniper plants that grow naturally along the island’s coasts. No other botanical is added. Thirty days of infusion in grain alcohol is followed by distillation with the discontinuous method for about 10 hours by means of steam heating and a copper still. The aroma and flavor are deeply concentrated and rich. The nose is overwhelmed and charmed by the perfume of Sardinian juniper that gradually leaves room for hints of resin and citrus fruit. The palate is mouth-filling and warm, long and expressive.
Our Harvest Gin is first distilled in direct-fire, traditional copper alembic pot stills in order to keep the wonderful aromas of the Viognier. Then, it is distilled one final time in a column still so that we can infuse the botanicals and offer you this unique aromatic gin.
This Gin isn’t your typical gin. It’s a seasonal, limited release aromatic grape-based gin we make once a year at harvest time. The floral Viognier white wine pomace from local wineries is fermented and pressed at our distillery. We then distill it using traditional techniques. Once we have the base spirit, it’s finished with a combination of unique botanicals vapor-infused in a botanicals basket. We combine locally harvested California bay laurel and wild fennel along with juniper berries and an array of delicious botanicals. The result is a floral and complex spirit crafted to entice the most discerning palates.
In order to produce a flavorful organic gin, we sought out farmers dedicated to sustainability and preserving the earth. We found four farms growing organic crops that could help us create the highest quality organic gin. We think that there is no better way to honor our farmers than by naming our organic gin after them.
Just like days when you need a sweatshirt on the beach, we’ve added a layer of warm and comforting flavors to our original gin. The gin is barreled at full distillation strength (180 proof) for three months in three different kinds of twice-used barrels: Ex-bourbon Apple Brandy, Ex-bourbon Rum, Ex-bourbon Sea Salt. The results are blended and diluted to 101 proof and rested in stainless steel for six weeks before bottling.
Without the heavy oak and char qualities of new barrels, the familiar botanical notes of Bimini Gin are enhanced rather than overshadowed. The citrusy notes of hops and grapefruit are intensified with hints of salinity. The juniper upfront mingles with tree fruit in the middle palate and then subsides into a lingering caramel and vanilla finish.

Our gin is a light, crisp and fresh twist on the traditional English gin. Distilled in the London Style, our gin is mixed with the perfect balance of botanicals inside our pot still and distilled in a single run. This process takes intensive preparation and attention to detail. We believe that this is the only way to create the beautiful, soft complexity that is our trademark.
We have sourced only the finest botanicals for our initial offering, Scott Street Gin. We believe that the best gin we can make comes from the simple and raw expression of these superior botanicals. Our juniper is delicious and grown in the wild. Meyer lemons are balanced with the warmth of grains of paradise and the complexity of coriander. Russian River Valley water shapes our gin into a supple and bright pour.
Cascading aromatics of citrus and rose petal on the nose bloom into the subtle scent of juniper berry. Silky and light bodies on the palate, our gin’s velvet mouthfeel is a lush backdrop for a lively coriander and smoky black cardamom. The base spirit of OOLA Vodka leaves a long, finely-textured finish with notes of caramel and vanilla.
