Paul Dethune Brut NV Champagne
This small organic winery in the village of Ambonnay in Champagne consists of seven hectares of land, lovingly cultivated by Pierre Déthune. It produces nine Grand Cru wines. Each of these undergoes malolactic fermentation and aging in the winery’s cellars, which which were cut out of the chalk in the 17thcentury.
70% Pinot Noir and 30% Chardonnay including 30 to 50% reserve wine guarantee this wine a very consistent quality. This champagne’s intense nose and sparkling colou with tints of ripe wheat will seduce you. On the palate, its aromas of underbrush, honeysuckle and bergamot invite you to the forest and the spice market. Its freshness and liveliness are combined with its creamy flavor. This Grand Cru champagne expresses all its complexity and deliciousness with a veal filet, foie gras and apple-apricot chutney, or a grilled beef.
