Lalocura Cuishe is made by Eduardo “Lalo” Angeles in Santa Catarina Minas. He mashes all of his cooked agave by hand with wooden mallets, and ferments in the open air using only natural yeasts. Santa Catarina Minas is known as one of the best places to find great clay pot distilled mezcal, and Lalo has quickly become renowned in the area. Similar to other producers in this area, the term Cuishe is used to describe an agave rhodacantha, which is what most other regions would call an agave Mexicano.
