Galil Mountain Cabernet Sauvignon (Upper Galilee) 2017
Production process: 4-7 days fermentation in stainless steel containers. Melothic fermentation and six months of aging in stainless steel containers to preserve the wine's fruity character.
The harvest: The winter preceding the growing season was rainy in the rains, but the temperatures provided the cold requirements for grapes.
The awakening was good and in the average timing over the last few years. The ripening season was in mild weather conditions except for one particularly hot week.
The 2017 vintage was the shortest known by the Galilee Mountain Winery and was completed in 10 weeks. The qualities seem especially good.
