The Badoz Trousseau Les Roussots comes exclusively from 32 year old vines in this prime site in Poligny. Trousseau is late to bud and develops a black-purple color as it ripens. The soil is gravel mixed with red clay and grey-marne over a base of limestone. Grass is planted in every 2nd row while the others are plowed. The grapes are hand-picked, transferred to the winery in small plastic crates, sorted on a sorting table, and de-stemmed. The fruit is given 4 days of pre-fermentation cold maceration at 8 degrees centigrade. The alcoholic fermentation begins with only native yeasts. It lasts for 2 weeks in wide 50 hectoliter tanks with occasional pumping-over of the juice over the cap of grape skins. The Trousseau completes its malolactic fermentation in tank and is bottled in June. It has a supple texture, medium dark color and body, and bright flavors of blue-plums, dark cherries with notes of pepper and minerals.

Made from vines between 30 and 50 years old, and aged in barrels for 16 months. It is a wine with an attractive collection of balsamic notes, of chocolate and black fruits, very warm on the palate and an extremely pleasant finish.

This Merlot is loaded with bold aromas of violets, dried cherries, toasty oak, and spice. This is a Merlot of depth and dimension on the palate, offering rich, layered black fruit flavors interwoven with nuances of blueberry, pomegranate, vanilla and sweet tobacco. A velvety texture is framed by sturdy yet supple tannins on the finish.

Rosé di Lulù features fruit from the single-vineyard Vigna de Trono planted over 50 years ago to Nero di Troia. At once aromatic and highly savory in character, Nero di Troia (also: Uva di Troia), is a significant and fine grape variety native to Puglia. Botromagno excels in producing red wines from this grape, and has also turned to the rosato option to great success. High elevation fruit at 700 meters ASL yields aromatic berries, and stainless stell fermentation and aging ensures ideal expression and freshness.
In 1923 the Caroni plain’s sugarcane plantation and distillery were founded in Trinidad. In 2003, when the islands sugarcane refinery and production was shuttered by the government, the distillery subsequently was forced to close the same year. Two years later La Maison and Velier, a company that bottles rare spirits, purchased all of the remaining stock at the Caroni facility. The rums for this product were distilled in 2000 using a double column still and a copper pot still and aged in oak. In 2017 this rum was developed using a stock of seven barrels that was blended to 55% ABV, creating 2700 bottles total to be released worldwide.

The Catena Malbec Appellation La Consulta shows a dark violet color with deep purple tones. The nose offers aromas like red fruit and ripe, concentrated dark berries with fresh herbs and floral notes like lavender and violets, some traces of vanilla and tobacco. The mouthfeel is rich, with raspberries and blueberries, spices notes and a touch of mocha. The finish presents soft and well-structured tannins with bright, crisp acidity that gives the wine exceptional length.
Pairs well with beef tenderloin.
Brut Rosé is racy and high-toned thanks to its high percentage of Chardonnay with just 5% Pinot Noir providing a pale melon color. Syrah requires a warm climate to fully ripen but enough moderating effect to produce intense, aromatic wines that are not overwhelmed by sweetness and alcohol. This Syrah grows in ideal terroirs of the southern Rhône and shows the varietal’s typical spicy notes of sandalwood, violets, and black pepper.
Syrah, with its deep flavors and firm tannins, is a natural match for grilled or smoked meat and dishes featuring herbs, roasted mushrooms, and onions. Seared venison or beef with black pepper and thyme or a Moroccan tagine of pigeon or chicken are complimented by the spicy characteristic of Syrah.

Being a winegrower implies searching for, and perfecting, ways of maximising sense of place in one’s wines over an entire lifetime. Each location creates a kind of ‘technical pathway’. Each decision by a winegrower is like a crossroads where he or she can take the right, or the wrong, direction. There are no shortcuts and, generally speaking, when the wrong decision is made, it is hard to make amends. So, finding the right path for each location involves searching for a site’s ‘solution’, like a puzzle you attempt to solve. The ‘solution’ is quite simply allowing the ‘terroir’ to express itself freely. It is within this scheme of things, and only this one, that a wine can find its truth, its vibrancy, its consistency, and this intimate logic that is expressed throughout its life. Because wine is not a snapshot, but rather a feature film. So, when it comes to assessing a wine, it is better to have seen the whole film, and not just a few shots from the first five minutes. "This is the first vintage from Saint Cosme's plantings on the limestone soils of Saint Martin. Although only a stone’s throw from Gigondas, the soils have a much higher proportion of limestone than in Gigondas which makes them uniquely suited to growing white grapes. The results are compelling – you can sense the limestone and finesse that goes with it. There is a distinctive fabric and it is easy to see the huge potential. The wine is balanced, ethereal and the aroma is quite sophisticated. It displays a real backbone and salinity.

Bright and clear as the natural spring from which its water is sourced, this sake displays up-front aromas of green apples and sweet melons with hints of citrus fruits and sweet almonds. On the palate, it is delicate, dry, and creamy with a pleasant, clean finish.
Best paired with crisp salad, Sashimi, citrus based Tiraditos, and light poultry dishes. It also compliments spicy food such as Thai/Vietnamese fares. Creamy cheeses and dessert work wonderfully with this Nigori.
