The stars dance in the sky above the fields for as many as ten years before the organic agaves are harvested for 123 Organic Blanco (Uno) tequila, the pure mother spirit from which Reposado (Dos) and Anejo (Tres) tequilas are created. As they reach the peak of maturity under the watchful gaze of the guardian snake (coatl), the agaves are hand-harvested and the hearts are slowly cooked in stone ovens for almost two days before being pressed to release their sugary juice. After a natural fermentation and precise small-batch distillation, Blanco tequila is born.
Marked by an earthy, citrus and herbal character, Blanco (Uno) is tequila in its most natural state and ideal as the basis for organic cocktails and sipping.
"Dei Casel" is the local nickname for the Adami family. South facing vines grow 180-300 m above sea level in mixed soils, typical of morainic (glacial) origin. The steep slopes experience moderate temperatures with cold winters and warm, dry summers.
Fruit is lightly pressed with bladder press followed by settling of must. Fermentation takes place in temperature-controlled steel tanks for 3 months on the lees.
"Metodo Italiano" or Charmat method is used for secondary fermentation in steel pressure tanks in order to preserve the aromas of the grape and develop the typical frutiness.
Brings beautiful ripeness with elegant tannins, depth and complexity, delivering notes of red cherries, blueberries, currants, forest floor, mocha, cocoa powder and crushed rocks. Bright acidity adds freshness and verve to the multi-dimensional mouthfeel leading into the long persistent finish.

This expressive and full bodied Petite Sirah exhibits a deep purple hue, revealing an assortment of wild berries, violets, licorice, pencil lead shavings, roasted coffee beans and fresh tobacco. The texture is gorgeous with richness and layers that give way to the long vibrant finish.

The spirit opens with baked apple aromas and then transitions into ripe red apples with some nutty notes from the extensive barrel aging. The Camut line of Calvados always show better with age, as the double distillation, while making them more neutral in their youth, frees the spirit from impurities that show with age. The palate is soft, rich and oozing with baking spice, intense earth and cooked pomme fruit. It is the top of the line for 15+ year old Calvados.
The fruit for this 100% Cabernet was grown at 2400 ft. in the Mayacamas mountains north of St. Helena, prime territory for producing concentrated, intense wines. A classic mountain Cab by winemakers Aaron Pott and Kyle Mizuno.
