Tequila and mezcal are produced in different states of Mexico (though there is overlap). Tequila can only be made, by law, with one variety of agave: the Blue Agave.
The agaves used were sourced from the Tequila Valley and the piñas were cooked for close to two days in stone ovens.
Showcasing the lowland spice and mineral, you can almost taste the iron rich red soils. The "Tres" is aged one year in fresh white oak barrels, coaxes more depth of oak from these exceptional barrels without overpowering the fruit. The barrels used are the real difference here - no ex-whiskey or brandy barrels, just high quality new white oak. Enhanced richness and herbal quality are the keynotes for the Anejo.
The stars dance in the sky above the fields for as many as ten years before the organic agaves are harvested for 123 Organic Blanco (Uno) tequila, the pure mother spirit from which Reposado (Dos) and Anejo (Tres) tequilas are created. As they reach the peak of maturity under the watchful gaze of the guardian snake (coatl), the agaves are hand-harvested and the hearts are slowly cooked in stone ovens for almost two days before being pressed to release their sugary juice. After a natural fermentation and precise small-batch distillation, Blanco tequila is born.
Marked by an earthy, citrus and herbal character, Blanco (Uno) is tequila in its most natural state and ideal as the basis for organic cocktails and sipping.
Brings beautiful ripeness with elegant tannins, depth and complexity, delivering notes of red cherries, blueberries, currants, forest floor, mocha, cocoa powder and crushed rocks. Bright acidity adds freshness and verve to the multi-dimensional mouthfeel leading into the long persistent finish.

The spirit opens with baked apple aromas and then transitions into ripe red apples with some nutty notes from the extensive barrel aging. The Camut line of Calvados always show better with age, as the double distillation, while making them more neutral in their youth, frees the spirit from impurities that show with age. The palate is soft, rich and oozing with baking spice, intense earth and cooked pomme fruit. It is the top of the line for 15+ year old Calvados.
A tribute to the late Angelo Rocca, this delicious wine opens with aromas suggesting leather, truffle, mature black-skinned berry, fragrant blue flower and a whiff of menthol. The smooth, full-bodied palate offers mouthfuls of red cherry, juicy raspberry, and a note of cake spice while fine-grained tannins provide polished support.
Our Harvest Gin is first distilled in direct-fire, traditional copper alembic pot stills in order to keep the wonderful aromas of the Viognier. Then, it is distilled one final time in a column still so that we can infuse the botanicals and offer you this unique aromatic gin.
This Gin isn’t your typical gin. It’s a seasonal, limited release aromatic grape-based gin we make once a year at harvest time. The floral Viognier white wine pomace from local wineries is fermented and pressed at our distillery. We then distill it using traditional techniques. Once we have the base spirit, it’s finished with a combination of unique botanicals vapor-infused in a botanicals basket. We combine locally harvested California bay laurel and wild fennel along with juniper berries and an array of delicious botanicals. The result is a floral and complex spirit crafted to entice the most discerning palates.
